About the Recipe

you can eat raw zucchini! While it has a very mild flavor on its own, it can take on the flavors of other ingredients in a recipe and complement them. Zucchini, also known as courgette, is a type of summer squash with many culinary uses. While it's commonly served cooked, many people enjoy eating zucchini raw too, as it works great in salads, with dips, as a wrap, or even spiralized to make low-carb noodles.

Ingredients

  • 1/2 tablespoon Ghee

  • 2 Tablespoons lemon juice

  • 1⁄4 teaspoon dried oregano or basil

  • 5 cups zucchini rounds (about 4 small zucchini)

  • 1⁄2 cup red or sweet onion (sliced thinly or chopped small)

  • 1⁄4 cup shredded or grated Parmesan cheese

  • Natural mineral salt to taste

Preparation

  • Mix oil, lemon juice, oregano or basil, salt, and pepper together in a large bowl.

  • Add the sliced zucchini, onion, and cheese.

  • Mix well all the ingredients.

  • Serve and enjoy!
