About the Recipe
Rice pudding is a dish made from rice mixed with coconut milk and other ingredients such as cinnamon, vanilla and raisins. Variants are used for either desserts or dinners. When used as a dessert, it is commonly combined with a sweetener such as sugar.
Rinse and strain a cup of basmati rice
Put a couple of tablespoons of ghee into a medium-sized pot. Add cardamom, cinnamon, and a couple of whole cloves. Mix in the rice
Add equal parts of water and coconut milk. About a cup each
Cook for 20 minutes. Stir occasionally.
Add a few dates after cutting them into smaller pieces. Throw in a handful of raisins
Cook for another 10 minutes. This should be ready now.
To serve, scoop the rice pudding into individual bowls, top with the diced mango and garnish with mint sprigs, sesame seeds, and honey.
